I -32 oz. can (4 c. ) tomato juice

2 c. water

2 med. potatoes, peeled & chopped (2 c.)

1 – 15 oz. can garbanzo beans, undrained

1 c. lentils, rinsed & drained

1 large onion, chopped (1 c.)

2 carrots, cut into thin 1 ” strips (pre-cooked somewhat)

2 Tbs. chili powder

2 tsp. instant beef bouillon granules

1 tsp. dried basil, crushed

1/2 tsp. garlic powder

Shredded cheese

 

In 4 ½ qt. Dutch oven stir together all ingredients except cheese. 

Bring mixture to a boil; reduce heat.

Simmer, covered, about 30 min. or until lentils are tender.

Spoon into bowls.  Top w/shredded cheese.

6-8 servings.
